Lost Horizons

WINE LIST

Red Wines

The theme of Lost Horizons red wines is soft, velvety texture, deep ruby character and accessibility to drink at an early age.

By using noble cultivars; particularly recently developed, advanced types of noble cultivars, grapes are obtained which are richer : dark and corpulent inside as well as darkly robed.

Once the grapes arrive at the winery, they are gentley conveyed in whole bunches with their stems into fermenters where they slowly undergo intracellular fermentation. They are crushed by their own weight in whole bunches. No yeast is added. The natural yeast in the grapes creates the fermentation. The fermentations takes place in a closed system with an absence of oxygen (it is the oxygen which robs the grapes of their colour). The fermentaiton is slow and takes place under controlled temperature. This advanced technique avoids hard pressing of the skins which eliminates the tannin acids normally found in red wines. It is these acids found in the skins which require long ageing before the wine is ready to drink.

After fermentation, the wines are aged in mild oak which has already been tempered with wine to avoid strong, woody flavor.

As a result of the advanced noble cultivars and careful wine making Lost Horizons red wines are soft and delicious and can be consumed at any early age.

Service : These wonderful wines should be served at cellar temperature (approximately 550F / 130C); not at room temperature (which is about 15oF higher). To achieve cellar temperature, store the red wines in a cool dry place or if this is not possible put them into a refrigerator for about one half hour prior to serving. This will remove the heat and make them ideal to drink.

Food : Lost Horizons red wines go well with all red meats, roasts, cheeses, red pasta and game.
